Cherry Chia pudding with Granadilla


  • ¼ cup chia seeds
  • ¼ cup chia seeds
  • 1½ cup Almond Creamery Nutty Latte nut milk
  • 2 tbsp honey or pure maple/agave syrup
  • 1½ teaspoon vanilla extract
  • ½ cup frozen or fresh  pitted cherries
  • ¾ cup water
  • 1 star anise or cinnamon stick
  • Granadilla pulp from about 2 fresh fruit


  1. In a bowl, combine the chia seeds, nut milk, 1 tablespoon of sweetener and the vanilla.
  2. Stir, cover, and refrigerate for 30 minutes or overnight.
  3. In a saucepan, combine the cherries, water, 1 tbsp of choice sweetener, and star anise/ cinnamon stick or both.
  4. Bring it to a boil then reduce to simmer.
  5. Simmer until the water has reduced and thickened slightly, probably about 15 to 20 minutes.
  6. Remove the star anise/cinnamon.
  7. Cut the granadilla and remove pulp.

All this can be done in advance and refrigerated until served.

To serve, pour cherry compote over chia seed pudding.
If you want to recreate the layers in the picture, mix 1/3 of the chia seed mixture with the cherry compote, and alternate the ‘white’ chia seeds with the ‘purple’ chia seeds.
Top with granadilla pulp and enjoy!
